I’ve been making this soup quite often and it’s become a new favorite. Here’s how I do it:
Brown some hamburger and/or sausage with a large onion.
Add a 1 quart carton of chicken or vegetable broth and 1 large jar of marinara sauce.
Add 1-2 cans of diced tomatoes
Add 1-2 cups of each of the following:
Celery
Carrots
Mushrooms
Cabbage
Yellow Squash
Zucchini
Green Beans
Season with Salt & Pepper, Italian Seasoning, Fresh Basil, Parsley (whatever you like).
