Small Group Dinner Parties

Our ward neighborhood has a tradition of holding small group dinner parties around this time every year.  It’s a great tradition.  We can sign up to host one of the parties, or we can just sign up to attend.  This year we hosted about 16 guests in our home.

The Activity Committee provides each host family with enough chicken to make anything we want.  The guests bring the side dishes, as suggested by the hostess.  This evening I decided to do a Mexican meal.  I prepared 2 large pans of Nacho Casserole.

Here’s the recipe:

Chicken (about 8 breasts, cooked, and cut up)
1-2 small cans of green chilies
2 cups of sour cream
some chopped green onion or dehydrated onion
a sprinkle of cumin seeds
1 can cream of chicken soup
1 package of corn or flour tortillas cut or torn into 1″ pieces
grated jack & cheddar cheese (lots) (mix some in and put some on top)

Mix it all together in a large bowl, put into a 9 x 13″ casserole dish, cover with cheese

Bake at 325 for 35-40 min, until it’s hot and bubbly
Serve with chips & salsa

The evening was a great success. I think everyone who came had a great time. We had a nice mix of older and young marrieds, and some from the apartments across the way. The food that came was good. I think everyone enjoyed the meal. To go with the chicken nacho casserole, we had rice, rolls, salad, roasted corn and roasted carrots, chips & salsa and 2 desserts We seated 8 in the dining room and 6 around the round table.  We enjoyed lots of visiting and getting better acquainted.
