Pfannekuchen, a Family Favorite

This is one of my favorite meals.  My Grandma Elsa fed Pfannekuchen to her boys, covered with berries or applesauce or other fruit.  My Mom made these in a big electric fry pan, covering the whole pan with one big pancake, cut into quarters and rolled with cinnamon.  We would eat them, one after the next on hot summer evenings.

I made these for myself during my single years, still enjoying every bite, then I introduced them to my kids.  This week Claire called.  She couldn’t find her recipe, so I figured I’d better post it here so it’s never lost.

Everything goes into the blender, then is poured directly into the hot fry pan, like a crepe.

Here’s how to make them:

8 eggs
1 1/2 cups milk
1 3/4 cups flour (adjust if needed)
1/2 tsp salt (a dash for each egg)
1 tsp vanilla

We roll them up with a sprinkling of cinnamon sugar.  I love to eat them with yogurt or fresh fruit.  John likes syrup and whipped cream.  They are best cooked thin.
